Despite what the title may lead you to believe, my grandmother did not make this salad. If you've ever watched Friends, you would know the chicken salad quote. And that's all that runs through my head whenever I make it, so decided to call it that. It's a chicken salad yes, but was not made by my grandmother.
This is my go-to recipe. It's so tasty and filling. It doesn't
leave you feeling hungry half an hour later, like some salads do. I also sometimes add beetroot, but I didn't have any this time round.
When I make salads I don't measure ingredients, I eyeball everything and taste as I go. But this is roughly the amount I use when I make this.
Ingredients:
2-3 Birdseye chicken chargrills
1 Romaine lettuce
75g Chickpeas
2 slices Halloumi cheese
30g Basmati rice
60g Sweetcorn
1/4 Red onion
Caesar salad dressing
1 teaspoon Black pepper
1 teaspoon Aromat seasoning
Method:
- Cook 2 or 3 chicken chargrills per the instructions on the box. Once it is cooked, slice them up into cubes.
- Chop up and wash your lettuce and place it in a bowl. Leave to the side.
- Cut 2-3 thick slices of halloumi and cut them into cubes. Fry them until they become golden brown. Leave to the side to cool. Or you can cook it last and add it to the salad warm.
- Chop up your red onion. I love lots of onion in my salad, and in life, so add as much or as little as you like.
- In the bowl of lettuce add in the onion, sweetcorn, chickpeas, rice and halloumi. Mix together to disperse the ingredients through the salad evenly.
- Add in the seasonings and stir again.
- Add the chicken and mix.
- Pour over the salad dressing. I use Caesar because it's my favourite and haven't tried it with any others, but I'm sure your dressing of choice will work just fine. Stir in the dressing, making sure the salad is evenly coated.
- Enjoy.
