Sweetcorn fritters are a great snack, appetizer or a light lunch with a simple salad.
Ingredients:
300g Sweetcorn
3 Spring Onions
3 Eggs
30ml Whole Milk
75g Plain Flour
Sunflower Oil, for frying

Black Pepper
Smoked Paprika
Aromat seasoning
Onion Powder
Method:
In a bowl, add all the dry ingredients and whisk together. In a separate bowl, add the milk and eggs and whisk. Add the wet ingredients to the dry and mix until just combined. Do not over mix. Add the sweetcorn with the water and the spring onions. Leave to sit for 20 minutes. Heat
up your oil in a frying pan, make sure the pan is well covered. Add in
spoonfuls of the mixture 2 - 3 at a time, depending on your pan size. Once fried, place your fritters on a plate or tray lined with kitchen roll to soak up the excess oil. Serve and enjoy.
