Peach Cobbler

I thought I'd try my hand at making a classic southern dessert, peach cobbler. My sister had made this before and I loved it so much I wanted to make it myself. I messed up sightly, I added all the sugar into the batter, when I was supposed to add half of it to the batter and half to the peaches. That's why it caramelized so much and looks burned, because of all the sugar. But never mind. It still tasted great.


Ingredients:

½ cup Butter

1 cup Plain Flour

2 cups Sugar

1 tablespoon Baking Powder

Pinch of Salt

1 cup Milk

2 cans Sliced Peaches

1 tablespoon Lemon Juice

 

Method:

Preheat oven to 180C or 160C Fan.

Melt butter in 13x9 inch baking pan.

Mix flour, 1 cup of sugar, baking powder and salt in a bowl.

Add milk until just combined (small lumps are OK).

Spoon batter into the pan with the butter, but do not mix into the butter.

In a pan add the drained peaches, the other cup of sugar and lemon juice, mix and bring to a boil.

Spoon the peaches into the pan of flour mix and butter, spread evenly but do not mix.

Bake 40-45 minutes. If it gets to brown too quickly. Cover with foil and finish cooking.

Serve with ice cream or custard.
