These muffins are so rich and chocolatey. The perfect chocolate hit.
Ingredients:
125g Plain Flour
25g Cocoa Powder
1 teaspoons Baking Powder
1 large Egg
60g Caster Sugar
2 tablespoons Vegetable Oil
100ml Whole Milk
50g Chocolate Chips
Method:
Heat the oven to 180C/fan 160C. Line a 12-hole muffin tin with paper cases.
Mix the dry ingredients together in a large bowl and make a well in the centre.
Beat the eggs and milk in a large jug. Pour the mixture into the well along with the oil and vanilla.
Whisk everything until you have a well-combined.
Fold through the chocolate chunks.
Spoon the mixture between the cupcake cases
Bake in the centre of the oven for 20 minutes, or until risen and springy. Set aside to cool on a wire rack.
I don't know why the tops look like this, but they tasted so chocolatey. They were on the drier side, but I have an idea that I think will fix that issue. Just gives me an excuse to bake.
