Bully beef is something I grew up eating, it's a classic Jamaican dish and is still one of my favourites to this day.
Some people used to call it a 'struggle meal' because people who were on a fixed income would eat this meal. I don't look at it like that. It's just a delicious dish that takes me back to my childhood.
Whenever I cook, I don't really measure spices. I'm only precise with measurements when I bake. Cooking allows me the freedom to just throw in what I want and hope for the best. I taste as I go, so add however much works for your taste buds. Start off small because you can always add, but you can't take away.
This is how I was taught to make it, but I know other households may do it slightly different, so feel free to leave a comment on how your family cooks it and what ingredients they do or don't use.
Ingredients:
Corned beef
Tomatoes, chopped
Onion, chopped
Garlic Purée
Salt
All-purpose seasoning
Black Pepper
Onion Salt
Mixed herbs
Garlic Powder
Sunflower oil for cooking
Basmati Rice
Optional accompaniments:
Vegetables
Potatoes
Jamaican dumplings
Salad
Method:
In a large frying pan heat the sunflower oil.
Add in the onions, salt and garlic purée. Stir occasionally so they dont sick to the pan.
After about a minute, add in the tomatoes and the seasonings. Mix the seasonings in well and leave to soften.
Add in the corned beef. Break it up with your spoon and stir it in well to combine it with the onions and tomatoes.
Leave to simmer, but remembering to stir occasionally.
I like to cook mine when it starts to brown and the liquid has reduced.
I serve mine with sweetcorn and potatoes.
