I swear if I ever tried to release a cookbook it would be the worst. Not because my food is bad, I'm a great cook, I just never write down measurements. I've grown up just throwing things in to the pan until my food tastes the way I want. Today's post is a prime example of that. I had some new potatoes to use up so decided to make a potato curry.

Ingredients:
Sunflower oil
Onion
Garlic, crushed
Salt
Black Pepper
Ground Cumin
Mild Curry Powder
Turmeric Powder
Garam Masala Powder
Chicken Stock Pot
Creamed Coconut
Potatoes (You can use any potato you like i.e. Sweet potato. I used a bag of new potatoes, quartered)
Serve with:

Garlic and Coriander Naan
Method:
Chop up the onion and potatoes and crush the garlic.
Add the onions and cook until they start to become translucent. Once that happens add in the crushed garlic.
Add all the curry spices. I add my spices by eye and while I cook taste as I go. Mix in the seasonings until it become almost paste like. Add in the stock pot and a bit of water to help it melt.
Add in the potatoes and cover with the curry base and then cover with enough water to cover the potatoes.
Bring it to the boil and then cover and simmer until the potatoes are cooked.

Serve with plain basmati rice and/or naan.
