Hey guys, back again with another post. I made a Banana bread over the weekend. I've made this banana bread loads of times and the recipe has never failed me.
Ingredients:
285g Plain Flour
1 teaspoon Bicarbonate of Soda
½ teaspoon Salt
110g Butter
225 g Caster Sugar
2 Eggs
4 ripe Bananas
1 teaspoon Vanilla Extract
Method:
Preheat the oven to Gas mark 4.
Grease a 2lb loaf tin.
In a bowl cream the butter and sugar together until light and fluffy.
Add the eggs, mashed bananas, buttermilk and vanilla extract to the bowl and mix well.
Add the sifted dry ingredients (flour, bicarbonate of soda and salt) to the mixture.
Place the mixture into the loaf tin and put in the oven and bake for about an hour or until golden brown or a toothpick comes out clean.
I had to cook my banana bread for longer because I couldn't find my usual loaf tin and had to use this one, which is obviously too small.
Once it's done, leave in the tin for a few minutes and then transfer to a wire rack to cool completely.
