Rainbow Cupcakes



Who doesn't love rainbows? 
One of my baking goals is to make a layered rainbow cake. Right now I don't have enough baking tins to do that. So until I have the right tools, I thought why not try a miniature version?

I am in no way a professional baker, it's just a beloved hobby and I wanted to share that.

I used an 8oz cake recipe for these cupcakes.

INGREDIENTS

CAKE:
8oz Self Raising Flour
8oz Stork Butter
4 Large Eggs
8oz Caster Sugar
Food Colouring

BUTTERCREAM:
200g soft butter 450g Icing Sugar
Food Colouring (optional)

EQUIPMENT:
Electric mixer
Spatula
Spoons
Bowls
Toothpicks
Muffin tin
Cupcake Cases

CAKE



1. Pre-heat your oven to Gas Mark 5
2. Fill your muffin tin with cupcake cases
3. Cream your butter and sugar together until it turns pale in colour
4. Add yours eggs one at a time.
5. Add your sifted flour.
Try not to over beat the mixture once you've added the flour.


6. Separate your mixture into 5 bowls.



7. Add you rainbow colours to each of your bowls.
Try not to over mix as you can knock the air out of your mixture.


If you can see from the top left cake I ran out of yellow cake mix.



BUTTERCREAM



1. Add the butter and sugar to your mixer and combine.


2. I added pink food colouring to the butterream.



3. Fill your piping bag and frost your cupcakes.





I added a mix of coloured sprinkles on top of the buttercream.

For a first time try I was happy with how they turned out.
