Long time no blog haha. Haven't really been cooking loads but I'm back with a new recipe post. This is something that I have been eating regularly pretty much like everyday because I just love it so much.

Ingredients:
- Onion salt (really helps to increase the flavour)
- Salt
- Pepper
- Italian herb seasoning
- 2 large shallots
- 1/2 red onion
- 3 cloves garlic
- 1/2 large onion
- Basmati rice
- Oil
Method:
- Add 1 cup of rice to 1 and a half cups of water and leave to boil until the rice has absorbed all the water and is cooked all the way through. Make sure to add salt to the water.
- While the rice is cooking cut up all the vegetables and then fry them in a large pot.
- Once the onions become translucent in colour its time to add the rice. So what I do is with a spray oil (my oil of choice is Filippo Berio oil spray) I spritz the rice and give it a few stirs and then keep doing it til all the rice is covered and well combined with the onion, it also helps the rice to not stick to the pot and add that little extra flavour.
