I'm back again with another recipe. This is a healthy one, as you can tell from the title. When I made this I didn't think to upload it on here so I only have a pic of the finished product.
Now you're probably thinking "Lettuce Soup? What is she on?" haha, that's exactly what I thought when I saw this recipe but I thought I would give it a go. It actually tastes like Leek and Potato soup. I got a thumbs up from everyone that had it.
Ingredients:
Bag of Iceberg lettuce
Bag of Iceberg lettuce
2 medium sized potatoes
1/2 onion
3 tbsp half fat creme fraiche
Oil (for frying)
Seasoning:
Salt
Pepper
Herbs de provence
Garlic Italian
2 cups Chicken stock
Method:
1. Chop up the onions and potatoes.
2. Heat up the oil and then add the onions. Cook until the onions are soft but not brown.
3. Add the potatoes and stir. Then add the chicken stock add the seasoning.
4. Leave to simmer until the potatoes are soft.
5. Add the lettuce and leave it to simmer until the lettuce has wilted.
6. Then add the creme fraiche and stir in until melted.
7. Transfer the soup to a blender and blitz. Transfer it back to the pot.
8. SERVE!
