Simple Vegetarian Pasta (aka whateve you have on deck pasta)

Hi everyone,

You ever have one of those days when you don't know what to eat and just stare into the cupboard and fridge/freezer hoping inspo will pop out at you. Well, that's what this dish is. I randomly found some ingredients in the cupboard and fridge and just threw them together and hoped for the best. This dish turned out delicious and was so simple to make.




Ingredients:
268g pasta of your choice
1 Onion
1 Shallot
2 Spring Onions
2 Garlic Cloves
1/4 Red Onion
3 Vine Tomatoes 
Peppers
Seasoning
1 teaspoon Olive Oil
4 teaspoons Butter
Parmesan Cheese
 

 





   

 

   

 
 
 
Method:
In a large pan of salted water, boil the pasta.
 
Chop up all the vegetables. 
 
In a dry pan or pot, add in the butter and oil. Add in the vegetables and cook until they start to soften.
 
After 2 minutes, add in the seasoning.
 
Crumble up a stock cube into the vegetables and add a large spoonful of pasta water. 

Serve it up and grater some Parmesan cheese over the top.


If you didn't want an all vegetarian dish you could add, ham, bacon, chicken or sausage to it.
